A cart is a vehicle or device using, usually, two wheels for transport. A dray is a heavy transport version of a cart, usually with four wheels.
so:
Drayman - A man who drives a four[or more] wheeled delivery wagon no sides [have up to 8 horses pulling] delivering goods
or:
Drayman: a driver of a dray, a long strong cart without fixed sides for carrying heavy loads

The Dray is often associated with the transport of barrels, particularly of beer.

...is a brewery delivery man. Beer is traditionally delivered on flat bed wagons/trucks/lorries or 'drays'.
Some UK breweries still keep a team of shire horses and a traditional dray for beer festivals, pub openings etc.
